3 INGREDIENT CHIA PUDDING


You may have heard of this super popular “recipe” if you can call it that, which is all over the internet. It makes a healthy snack or dessert. Basically there are actually two ingredients: chia seeds and almond milk (or whatever “milk” you want). Here ya go.

RECIPE: CHIA SEED PUDDING

In a glass or small jar, put about 2 tablespoon of TJ’s chia seeds. Next add about 1/2 cup of any kind of milk beverage (like almond milk). Give it a little stir. There are no rules that you must use almond milk, just use whatever you like best. Me, I alternate all the time between OAT, ALMOND or SOY MILK depending on my mood. Option: Add a bit of honey or any of your preferred sweetener (agave, maple syrup) and stir that in. While optional it does add some flavor and if you have kids you must use something like that. All you do now is wait for it to thicken so put it in the fridge and let the mixture sit in the fridge for at least about 30-60 minutes but it sets up best if you let it sit for 8-12 hours or overnight. When ready to serve put some fruit on top, or even something crunchy like Granola.

Chia seed pudding is super easy to make and of course very healthy. Now there is no rule that you can’t have use more ingredients and include a few other things. I usually mix in some yogurt or kefir too with the oat milk and sometimes add a few dried fruits like dried cranberries in. Basically figure about 1/2 cup of liquid to about 2 tablespoon of the chia seeds. If that is too thick (or not thick enough) adjust with more or less chia seeds until you get the consistency you, or your kids, prefer. This is a great snack.

Trader Joe’s ORGANIC FLAXSEED MEAL


“Light nutty flavor that is great in oatmeal, smoothies, pancakes and waffles.”

Unfortunately Trader Joe’s recently seems to have discontinued their Whole Roasted Flax Seeds – a good product, I found- and replaced it with this version which is ORGANIC GROUND FLAXSEED MEAL. This is a bit of a bummer as I preferred to have WHOLE flax seeds I could grind myself fresh, to a meal already ground up. We have a second coffee grinder which is for grinding up things besides coffee, like seeds and spices. I would grind up the whole flax seeds in the morning just before using them. Which is ideal as they contain oils which are best fresh. If I can find them elsewhere I may find another whole flax seed. I think Whole Foods might sell them. For the time being, I got this version that Trader Joe’s switched to and use them for mixing into my Kefir, and smoothies and or adding into baked goods or pancakes. Refrigerate after opening to keep as fresh as possible, maybe even in the freezer is best. $3.99.

Trader Joe’s ROLLED OATS (recipe: overnight oats)


All Natural. WHOLE GRAIN. GLUTEN FREE. Loaded with fiber. What’s not to like?

Trader Joe’s ROLLED OATS are good. Among other uses, I use these to make OVERNIGHT OATS which make a terrific breakfast. Need a no-recipe recipe? Here you go: Put some rolled oats into a container and cover them with your favorite ‘milk’ (I use TJ’s Oat Milk) and add some Kefir or yogurt. Stir, cover and leave the the container in the fridge overnight. Options? Maybe add a hint of a little natural sugar, some dried fruits: raisins or cranberries. The next morning you will have yummy but not mushy Overnight Oats ready and waiting for breakfast. These DIY ones are better (and way cheaper) than the prepared overnight oats TJ sells already made in the refrigerator, which for me are way too mushy from having sit “overnight” for a few weeks (!) To Serve: top your Overnight Oats with some fruit, sliced bananas perhaps, and maybe something crunchy, like cereal or Granola. Maybe some chia seeds too! I tried TJ’s “toasted rolled oats” but I didn’t taste any toasted notes any different from these oats (those say organic and cost more of course. So I stick with buying the bag of these rolled oats. This large bag of Trader Joe’s Rolled Oats is $3.99 (for 2 lbs, or $2 per pound). Of course you can cook these oats up for hot oatmeal. Personally I do prefer the texture of TJ’s Steel Cut oats for oatmeal and buy those as well. Use these oats for baking, and cooking too. I mix these into meatloaf for the binder.

Trader Joe’s Roasted Golden Flax Seeds (whole seeds) – “Naturally rich in Omega-3, Lignans and Dietary Fiber”

You may know that flax seeds are probably one of the healthiest things you can eat. We’re talking Super Food healthy ! For one thing flax seeds are loaded with Omega-3 fatty acids and are high in protein and fiber. Heart health: studies have shown just by eating 2 tablespoons of flax seeds a day, they can lower blood pressure 10-20 points. Personally every day I eat 2 spoons of flax seeds, which I grind up and mix with yogurt and/or soy milk in my breakfast cereal. I add some chia seeds to boot! You can also put theses in your smoothies.

Up to now I bought flax seeds (raw) in Bulk at a health food store. Then I saw these Roasted Flax Seeds at Trader Joe’s. After trying them I decided these are better tasting than the other ones. Why? Roasting them definitely improves the flavor of flax seeds making them more nutier tasting and crunchier.

You can either eat them whole or grind them up (coffee grinder or morter and pestle). You can sprinkle flax seeds on your morning cereal, put them into baked goods and sneak them into foods like baked goods as well as add them to your smoothies.

Trader Joe’s GRAINLESS GRANOLA

“SWEET AND SALTY CLUSTERS MADE WITH ALMONDS, COCONUT, SUNFLOWER AND PUMPKIN SEEDS”.

This is a newish Trader Joe’s product, “GRAINLESS GRANOLA” – Meaning no oats/grains, and mainly nuts. THIS STUFF IS AMAZING! When you cut open the bag, a huge waft of coconut smell hits you right in the nose. You look inside and see clumps and clusters of Almonds, Coconut, Sunflower and Pumpkin seeds in a “salty, sweet” combination that is quite irresistible. I started just popping a few clusters into my mouth and they are delicious just like this, as a snack. I could have eaten the whole bag if I didn’t stop myself. I can easily see Moms filling little baggies with this for yummy healthy Snackables.

Next I put some of this cereal in a bowl with milk and yogurt and banana and it was even more delicious. Now I love granola, the regular kinds with oats, so for me there is no reason to be “grain-less” other than this is simply super delicious. I even put this on top of my regular granola as a crunchy topping. Ditto on my cooked steel cut oats. My suggestion is add some dried fruits, like cranberries or raisins which makes this Grainless Granola even better. As oats are fairly cheap and nuts are expensive, naturally this granola minus oats costs more than the regular granolas TJ sells, but its still a good deal and its so good you probably won’t care too much.

TJ’s got this one right and has a major hit here I think. Grainless Granola is $4 for a 10 oz bag. Try this, you will no doubt love it as much as I did. And yes it’s of course Vegan and Gluten Free. I guess its kind of aimed at “Paleo” people, which I’m not but frankly it’s something any homo sapiens will love.

Trader Joe’s CARAMEL APPLE GRANOLA


 

This seems to be another of Trader Joe’s Fall/Winter seasonal products.

This is actually a terrific granola and excellent product, despite the very so-so name (“apple flavored”??) and pretty lousy package design (4 fonts used in the name and every letter in apple ??!)  I can’t tell if the name and package design is geared towards kids – or designed by a kid – but this isn’t a kiddie product. Its an excellent, delicious granola, maybe the best granola TJ’s sells. This is a cereal which I’m sure both adults and kids would love.

From the package: “Sweet and tart crunchy clusters with apple slices, peanuts and pumpkin spiced pumpkin seeds”

Despite the words about pumpkin spice, actually this isn’t another TJ “pumpkin spice” thing. In fact if they didn’t mention it I wouldn’t even know there were any pumpkin spices. Whatever spices are in this, they are subtle and blend in perfectly with all the other flavors (apple/cinnamon).

The particularly great part about this granola is it that it contains (dehydrated) bits of whole apples, with the skin on even! The apple bits are what makes this a super granola. The clusters with apple bit are especially tasty, a bit chewy and very apple yummy. The granola is a tiny bit on the sweet side (hence the “caramel” part of the name) but I don’t find it overly so, especially when I eat it with plain yogurt and milk which balances out the sweetness.

Its great as a snack on its own, when you get those big clusters of granola. Its super as a cold cereal. I haven’t tried it warm but the package suggests its good for that, and I have no doubt it wouldn’t be wonderful and smell great when served a bit warmed up. They recommend garnishing it with some fresh diced apple. I tried it with fresh apples and its even better with them. Also with dried cranberries, they match quite well.

So I give this granola a big RAVE and suggest its worth trying while you see it. A 12oz package is $3.49. The bag is resealable to keep it fresh and crunchy as long as possible. You might even buy a couple of bags while you can get keep a few in the pantry for the “off-season”. They should carry this year-round.
