Trader Joe’s recipe idea: Smoked Salmon on Potato Pancakes


This is hardly a “recipe”, just putting out an idea how sometimes putting two or three TJ products together is an easy way to come up with something good. For New Year’s Eve I had the idea for a “Russian inspired” taste: Smoked Salmon with Potato Pancakes (the pancakes instead of blinis). The combo turned out just as delicious as I hoped and we really enjoyed these as a super easy special holiday meal – however you can make them any old day!

I took a package of Trader Joe’s Latkes / Potato Pancakes and Smoked Salmon and OK instead of sour cream I actually used Greek yogurt to save a few calories. Of course a Russian would use lots of Sour Cream, calories be damned, plus fresh dill. To put the dish together all I had to do to was cook the frozen Potato Pancakes till crispy in an frying pan, then topped them with a good amount of smoked salmon and topped that with a spoon of Greek yogurt. Better with sour cream sure, up to you. Sprinkle some fresh dill on if possible plus a few drops of fresh lemon juice. Voila, it took about 5 minutes until they were ready to serve as a dinner with salad and roasted beets on the side. Easy as pie to “make” and really yummy, so try this if it sounds good to you. You could make this as an appetizer for a few guests in minutes and make a big splash with almost no work except assembling the ingredients. Now I was hardly the only one shopping thinking about Smoked Salmon early afternoon of New Years Eve. Trade Joe’s whole section with smoked salmon was completely sold out except for a few packs of this Nova Salmon! The Nova was a wee bit saltier than some other versions they sell, but as fine with the creamy sour cream / yogurt as it it all balanced out. The next time I make these I will probably opt for the Everything Salmon.

Trader Joe’s (frozen) Potato Pancakes Latkes are $2.69 for 10 little pancakes. I think the Nova was about $9 for 8 oz package.

Trader Joe’s BREADED FRIED RAVIOLI

Breaded deep fried ravioli? I was intrigued and thought I would give them a try. Well I have to say they are quite good, in facgt better than I expected them to be. First I should say I/we almost always try to “eat healthy”. I almost never eat deep fried foods. So frankly deep fried breaded ravioli is not something I would normally eat or buy on a regular basis but hey this is the job, reviews have to be done 😉

Having now tried them, I can tell you these fried ravioli are actually pretty yummy. The two of us totally enjoyed eating these, as a rare treat. I could see these as something you could serve once in a blue moon in small portions, say 4 or 5 ravioli, as a side or as an appetizer? They might be even be a tasty and easy treat to serve up as an hors d’oeuvre for company. One recommended method to make these is to Pan Fry them which is what I did. I used less than a tablespoon of olive oil, where as the directions say, oil a 1/4 inch deep. I don’t think you need more than a tablespoon or two of oil in a non-stick or cast iron pan. TJ’s says they are good done in an air fryer too. Once the ravioli looked crispy and golden brown, I drained them on a paper towel. The breaded ravioli were delicious, a little crispy on the outside and when you bite into them, full of soft melted cheese inside (5 kinds of cheese). Naturally these will be perfect with a bit of your favorite tomato sauce (fresh basil if you have), and they were delicious when I served them with some sauce and a sprinkle of Parmesan. Here is my honest review of these frozen “Pao de Queijo” (cheese bread)

Wow are these delicious! If you never had tried “Pao de Queijo” before, you have to give them a taste.

I have had Brazilian friends who introduced me years ago to the glorious little baked rolls called “Pao de Queijo (Cheese Bread). Trader Joe’s now carries them frozen. Super convenient. To enjoy them, you only have to heat them. They can be ready in 6 minutes (though it took actually about 10 in my oven). We made and ate them last night and served them to our guest, who just loved them and devoured many of them. To be honest, we couldn’t stop eating them. These are so good.

Super chewy, moist and cheesy on the inside. While they are delicious As-Is, I suggest you try eating these the way Brazilians sometimes eat them : cut them open and put a slice of cheese in the middle (and / or ham) to make a little mini sandwich. TIP: take them out of the oven after about five minutes, slice open and put a slice of cheese inside then put it back in the oven to melt while it finishes baking. Heavenly!

I dare you to just eat one of these. It’s impossible… they are so delicious you will easily want three (or four!) A package with 12 rolls is about $4.

Heating Instructions: Preheat oven to 350. Place bread on baking sheet. Bake 6-8 minutes (it took 10 minutes in our oven)

Are these really GF? As they are made from tapioca flour yes these are naturally GLUTEN FREE. Ingredients: Tapioca flour, milk, Parmesan cheese, oil, egg, water, salt, pepper

Trader Joe’s Korean Glass Noodles & Vegetable Stir Fry “JAPCHAE”

I had read about this new Trader Joe’s frozen Korean frozen dish. Reports on the internet were that it was good. I had to wait for it to hit our shelves in NYC so I could check it out, as I love Korean JapChae. Finally I saw it in our TJ’s here and got one to try. I have to say I was kind of impressed. It is indeed quite good. Even my (Korean) wife gave it her seal of approval with her comment “it tastes like JapChae” – and it does say it’s “MADE IN KOREA”. If you fix it up a bit it can be even better.

The noodles in JapChae are a clear vermicelli type noodle made from Korean sweet potato. These are someties called glass noodles as that is what they resemble. Korean Chap jae or (Jap Chae) is a tasty noodle stir fry dish. TJ’s ChapJae is VEGETARIAN / VEGAN. As well as being quite tasty it’s a pretty good deal at $2.99 (for 10 oz package). For the two of us, the container made 2 medium sized portions for a side dish. If you add things, it can become a dinner or main dish. We ate this with our dinner of potsticker dumplings. These two were a great combo together! We enjoyed the dumplings with this side dish of noodles with a bit of Kimchi too.

Carrots and red and green bell peppers round out the dish. Drizzle some more toasted sesame oil on just before serving if you have it. This dish is not spicy. Add something if you want it spicy. One can “beef up” the dish just by adding additional things: protein, more veggies. For example we put fried eggs on top which was a terrific addition. Top each portion with a fried egg, or you could make soft scrambled eggs and mix them into the noodles when they are ready to serve. You could also add in some BAKED TOFU or serve it on the side with this.

So you can easily take this package of JAPCHAE and use it as the base for making a bigger fuller meal out of it. Add in to the noodles (or top when serving): cooked ground beef or ground turkey or pork, grilled chicken, shrimp, salmon or what have you. You can add more vegetables, too! I like it with lots more carrots so I usually julienne some and cook them and add those it. Or add some mushrooms, spinach, green beans…. Add some things to this and you will have a bigger and pretty easy Korean dish as a dinner for two, for way less than a restaurant or takeout. We liked TJ’s Jap Chae a lot. I will definitely buy this again.

One side note though: it does have a pretty high SODIUM CONTENT. If you eat this whole container yourself, note that you are getting a lot of Sodium (1120 mg) or almost half of the daily recommended level. Eating 1/2 the container as a serving brings the Sodium down to (560 mg) 24% of the recommended level, clearly much better for you. And if you add veggies or other things that can spread out the sodium level as well. One should check Sodium levels listed on all prepared / packaged food as many foods can skew high especially some Asian dishes.

Trader Joe’s PREMIUM SALMON BURGERS


For a short while, Trader Joe’s was carrying fresh Salmon Burgers in the fresh fish section of the refrigerated case. Unfortunately for one reason or another they must have been discontinued these and TJ’s no longer sells fresh salmon burgers – which were pretty good. However TJ’s does carry a frozen version, “Premium Salmon Burgers”. Because these have a lot more ingredients listed than the fresh version had, I was a bit reluctant to try these but I finally did and found them to be actually a bit better than I had expected. At first, I tried cooking them defrosted (which the package says not do!) and I found out why. Defrosted they are so soft you can’t even get them out of the plastic wrapping without falling apart as you do it. Therefore I cooked them again, this time from frozen as the package states. Of course the salmon burger was much easier to handle when it was a frozen hockey puck. Interestingly I found the results cooking them frozen or defrosted came out about the same. I grilled the frozen salmon burgers, using the pan fry skillet method, as per the package cooking them for about 3-4 minutes per side in a little oil and butter. They were pretty tasty. We ate them on a brioche bun with lettuce, tomato and tartar sauce. On the plus side, the Sodium level listed is not terribly high which is good. I would buy these again. They’re $6.99 for a 12.8 oz package which contains 4 salmon burgers.

Also available at Trader Joe’s in the freezer next to these fish burgers are some other kinds of seafood burgers: Mahi-mahi burgers and shrimp seafood burgers. I will review these too in future.

Trader Joe’s FIRE ROASTED CORN


Ingredients: Corn

Yup, that’s it, this has one ingredient. Just Corn. But what they’ve done to it here, is this has been “FIRE ROASTED”. In other works cooked enough to get a few almost burnt bits. In my picture below as you can see, its gotten a tiny bit blackened from the fire roasting. This of course is the famouse “Maillard” reaction food gets from cooking which concentrates and amplifies flavor. In this case it makes this corn taste even better for example than TJ’s regular frozen corn — which is still also great by the way (and costs a bit less).

You can make this fire roasted corn just on its own. It was delicious when I simply sautéed it in butter to make a simple side dish. If you want to get fancy, hit that with a squeeze of lime juice too!

Naturally this corn is fantastic used as an ingredient as well. For example, add some to corn bread. Add it to salsas, to soups, stews and of course any Mexican dish, like some Mexican style rice. Its great for that.

This Fire Roasted Corn is great to have on hand in the freezer. It’s $1.99 $2.49 NOW $2.79 !(1 lb).

It’s worth trying.

I would buy it again.

Trader Joe’s ATLANTIC SALMON FILLETS (frozen)


(Norway, Farm Raised, Skin On, Boneless, Medium Firm Texture, Mild Flavor)

Each 1 lb bag has 4 (4 oz) pieces of fish inside. Norwegian farm raised, Atlantic salmon, perfectly flash frozen. You will get mostly center cut portions plus a tail portion usually. So first things first, DEFROSTING: The best method to defrost anything is an overnight thaw in the fridge. So best to take out the portion(s) you want the night before and put in a covered container. I did that last night and while it was not completely defrosted, it was mostly defrosted so I just left the salmon out for another hour on the counter.

If you didn’t take it out the night before, in a pinch you can do the quick thaw method as described on the package (bagged, in cold water 30 minutes) . Obviously if you are not using the whole thing, just seal the package back up with the nice built-in zip lock and try to squeeze out excess air.

COOKING : (Grill, bake, boil or pan fry)

I like pan frying and broiling the best. Brining? I tried the quick brine technique of giving the defrosted salmon fillets a 30 minute soak in a brine. I liked the results (see link below for full info at The Kitchn)

But if you don’t have time for brining, don’t worry it will still taste great.

After drying off the salmon, I gave it seasoning on both sides with a nice sprinkle of AJIKA which will give great color as well as flavor (in my case as it was brined, I added no more salt). I cooked the fillets using the pan fry method in a cast iron pan (or use a non stick pan) in a mix of oil and butter for about 5 minutes on the skin side first till the skin looked crispy. Flipped them, then cooked about 2 minutes on the second side which needs less time than the first. Personally I hate overcooked fish. Cook fish just till it’s no longer translucent and flakes easily with a fork. You can always put it back for 30 seconds if it needs it. You don’t want to dry it out especially as farmed salmon has less fat.

Other cooking methods would be broiling or grilling or baking. Or I imagine cooking in an air fryer.

SAUCE: If you want to serve with a sauce, TJ’s tzaziki sauce will be great with salmon. Or Greek yogurt mixed with lemon juice, or tartar sauce. Even simple lemon juice and butter is great. Fresh dill is wonderful with salmon. This time I plated the salmon up with some lemon butter, and served it with a side of TJ’s Harvest Grain Blend (shown) which is perfect with this. The salmon was tasty, if a bit mild of course as this is farmed. Wild salmon, which I love is usually about double the price of this. Trader Joe’s sells this for $8.99 for a 1 lb package (a bit little over $2 a portion). For the price I think this salmon is very tasty and a good value. I find Trader Joe’s version, superior to Costco’s version. So giving this a thumb’s up for value and quality. INGREDIENTS: Atlantic Salmon (no added salt) Protein = 23 grams! EAT FISH

Overnight thaw: Remove fish from packaging and place on a try (or covered container) Leave overnight in fridge

Quick Thaw: Place fish in a sealed bag in a big pot of cold water until defrosted (which may take up to 1 hr).

DO NOT microwave fish to defrost: it will give a very mushy texture and ruin the fish

Don’t feel like cooking but want to eat salmon? Check out Trader Joe’s LIGHTLY SMOKED SALMON . Gourmet quality hunk of salmon, just open the can. Probably the best salmon you ever got canned.

TJ’s Italian Style Meatballs


Trader Griotto’s (frozen) Flame Broiled Italian Style Fully Cooked Meatballs

First, let us be realistic. Are these Trader Joe’s frozen meatballs anywhere as good as my own homemade ones (which in all modesty are pretty good?) Of course not. However, making meatballs is kind of a lot of work. So I wanted to try these Trader Joe’s all beef “Meatballs Italian Style” to see if they are any good. We did enjoy actually them with my own tomato sauce for a pretty easy dinner. So these might be worth giving them a try to see what you think. The dish I made with these turned out tasty. I made an easy quick sauce: olive oil, garlic, onion, tablespoon of tomato paste, can of diced tomatoes, grated pecorino cheese and basil – a recipe is below). Of course you can just use a bottle of sauce you lazy bones, that’s fine. I put the meatballs in the sauce and simmered them for 30 minutes to hopefully get them flavored with the sauce. They turned out pretty well, my main complaint being they had a slightly rubbery texture. Honestly I don’t know if they always do or it was my fault defrosting them (or not). I would usually thaw something like this in the fridge overnight as I always recommend, but this was a last minute dinner idea and I thought maybe I could just put the frozen meatballs into the sauce and slowly defrost them on low in the sauce (which the package does kind of say). Is that why they came out a bit rubbery? Next time I’ll defrost them slowly and see. Anyway I served the meatballs and sauce and some of TJ’s fantastic Country Loaf bread I had found. We did kind of a “meatball sub” with these which was actually pretty tasty. A few night’s later, I made Ziti with the leftover meatballs & sauce – also tasty. So my take is these are worth giving a try, either with your own sauce or your favorite TJ’s sauce. I do suggest doing a proper defrost (thaw in fridge night before). Also I will brown up the thawed meatballs even more in olive oil before adding to sauce. Browning meat gives lots of flavor. I recommend you simmer these in sauce for at least a 1/2 hour to absorb flavors. These ITALIAN MEATBALLS were about $4.50 for a 1 lb bag. FYI , TJ sells other versions, one made with Turkey and one Meatless, all of which you will find in the frozen section near these.

FAST EASY TOMATO SAUCE and MEATBALLS: Take 2 tablespoons of tomato paste and sauté that in a few tablespoons of olive oil for 30-60 seconds. Add a good amount of sliced garlic and a little diced onion and cook 5 minutes on low stirring occasionally till onions are translucent. Add a can (or two) of Diced Tomato, rinsing out the can with a little water (or wine) to get it all. Simmer on low 45 minutes, with the thawed and browned meatballs. Add Italian Seasoning to taste. Optionally add capers, and some Bomba. When serving, add grated Parmesan, Pecorino, Asiago or Grana and if you have some fresh basil, lovely. Serve with either pasta, gnocchi, or warm fresh Italian bread for a meatball hero.

Despite all these options they list I think the best one would be the thaw in fridge (1/2 day?)

TJ’s CHILE LIME CHICKEN BURGERS


I buy Trader Joe’s ground chicken in the fresh meats section pretty regularly, however I came across these Chile Lime Chicken burgers (in the frozen section) which I had not seen before and thought I would get them to see if they were any good. I saw on the internet these are a bit popular. Ingredients are: “ground chicken, onions, bell peppers, garlic, cilantro, natural flavor, salt, lime juice concentrate and red pepper flakes”. Well that sounds OK, right? Inside you find four burgers (1/4 lb each) so they are not very thick, quarter pounder size. I took two out and left them to defrost overnight in the fridge. As they are pretty thin I think they probably just need a few hours to defrost in the fridge so one could probably even take them out in the morning and have them ready for dinner.

I put them into a hot cast iron pan with a spoon of EVOO to grill them up, and cooked them for 3-4 minutes a side. To serve them, I put them on toasted buns spread with a nice amount of TJ’s CHILE LIME MAYO (its really tasty) which was perfect for these as they’re not as juicy as beef burgers of course. So these chicken burger were actually pretty tasty served this way on a bun with lettuce and tomato, that chile lime MAYO and a few extras. If you make them like the picture on the box, with a bit of guacamole, I am sure that would be great.

Would I buy them again? Well to be honest I prefer the softer texture of TJ’s fresh ground chicken that I make into burgers over these pre-made ones. These were just a little tough texture wise and frankly I can easily add a few ingredients to ground chicken myself, even simply sprinkling it with AJIKA or CUBAN SPICE, and form a bit thicker patty of maybe a 1/3 lb. Therefore I probably would not buy these again. However you might like the obvious convenience of having these in your freezer.

These cost $3.49 for the package (16 oz containing 4 burgers). They are no doubt lower in fat than beef burgers having only 6g fat each.

TJ’s “Peanuts For Chocolate!” ICE CREAM


Trader Joe’s Peanuts For Chocolate! Ice Cream

OMG. This new ice cream offering from Trader Joe’s is to die for (or rather kill you?) It should have a label on it: Warning “Highly Addictive”. I frequently see none in the case, as people are grabbing this stuff up.

Tasting it, I found it overwhelmingly rich but it was hard to stop tasting it, putting my spoon back in and saying over and over “just one more little taste”. A few minutes later I noticed somehow a third of the box had magically disappeared. It’s chocolate ice cream crack.

This ice cream sounds like something Ben & Jerry might have dreamed up: “Chocolate Ice Cream with Chunks of Chocolate Peanut Butter Joe-Joe’s Cookies and Peanut Butter Swirl” – this a very rich dark chocolate fudgey ice cream with textures of stuff here and there (cookie) and the occasional swirl of peanut butter. It didn’t look like the package exactly but no matter. It is simply incredibly delicious and addictive if you are a Chocoholic, like your humble narrator. The combination of chocolate and peanut taste is amazing, and incredibly rich. Listen I am not saying this is the healthiest thing in the world to eat, ‘cuz let’s face it, it sure as hell is not, however every once in a while, you can tell yourself you deserve something special for getting through this difficult period, you know…. So if you want to satisfy your deepest darkest chocolate addiction, this stuff will do it. I promise you though that little pint of ice cream will go way quicker than you imagined. Maybe it’s a good thing they don’t sell this in the bigger quart size.
