Trader Joe’s WHITE MISO PASTE

This is very nice white miso paste which is not quite as thick or strong or salty as many Japanese miso’s pastes in tubs are. This one is lighter and not as thick so its a bit easier to use just as is out of the package.

The squeezable pouch make is very easy to squeeze out as little or as much as you need.

This light white miso adds really delicious flavor.

This is a light white miso and I really like this to cook fish or chicken or what have you, usually spread this on and then broil it so it gets a little bit of a char. I used it recently to make some broiled salmon and another time with some mahi mahi and it worked great with both of these fishes. But you could use it on chicken of course as well.

MISO COATED SALMON (or any fish) Coat the fish with a layer of this white miso, then let it marinate it for about 30 minutes or more. Broil (or bake) the fish as usual but keep a close eye on it as the miso will brown and you want it a little browned but not burnt of course. When your dish looks golden brown, remove and let it sit for a few minutes before serving.

Optional: Mix up a bit more of the miso with a little honey and lemon juice to make a light glaze. During the last minute or so of cooking, take out the fish or chicken or tofu your are baking or broiling under the grill. Spread on the miso paste glaze, put it back in and let it cook for 30-60 seconds until the glaze looks perfectly browned. Option: You can also serve some of this miso glaze mix as a sauce alongside your protein.

In addition to fish I find the miso marinade works just as well using chicken and broiling it. It can also be used in soups, as well as in salad dressings, add to ramen or noodles, etc. A little miso added to some butter is great with veggies and other things. I bet it works well even with TOFU.

TJ’s White Miso comes in a handy squeeze pouch. I find this very convenient and easy to work with, to be able to squeeze out some quickly, and its much more convenient compared to the 1 lb tubs of miso I usually buy from a Japanese market. Frankly I usually find one of those tubs somewhere at the back of my fridge a long time after I bought it and maybe it expired six months back (but honestly Japanese miso is so salty it doesn’t really go bad, it can last a year easily)

Trader Joe’s WILD ALASKAN SOCKEYE SALMON fillets (& recipe for Broiled Miso Salmon)


Here’s a review of Trader Joe’s Wild Caught Alaskan Sockeye Salmon, which you will find with the fresh fish (Label states “previously frozen” (I believe they process and flash freeze the salmon as soon as it comes off the boats in Alaska.) Boxes of frozen fish arrive at Trader Joe’s; they put it out to slow defrost in the refrigerated case overnight daily (proper slow defrost)

I had asked my wife to pickup some salmon at Trader Joe’s for dinner recently. Instead of the Norwegian Atlantic salmon we usually get and I thought she would buy, she picked up some Wild Caught Alaskan Sockeye fillets. Yes, it cost a bit more. But we really liked the wild salmon and thought it’s worth the occasional splurge for this “upgrade”.

You can pan fry, broil, bake or BBQ it. I decided I would broil it in a Japanese style, with WHITE MISO. It was delicious done this way, which is a great way to make salmon, or any fish, if you never tried it. The miso gives it a lot of “umami”.

Normally as I mentioned, we tend to get Atlantic Salmon, farmed from Norway. Which I honestly think is also very good and of a very high quality. So lets discuss, Wild vs Farmed Salmon taste-wise: Most of us are probably now more familiar with eating Atlantic salmon farmed from Norway or elsewhere, compared to wild caught Sockeye salmon, which is more expensive.

Alaskan Sockeye Salmon is different from Atlantic salmon. First, while the two fish are related species, they are actually different fish. If you compare the two fish visually, the two salmon varieties look shockingly different (see pictures below). Second, is the simple fact that a wild Sockeye hunts food. It swam thousands of miles over its lifespan. Therefore it is more muscular with denser flesh. It has a more robust taste than farmed Atlantic salmon. A Sockeye’s body (and flesh) is DEEP RED with a dense texture. It has less fat. So doesn’t exhibit the white marbling (fat) which Atlantic salmon has. Sockeye is not just leaner, its thinner too. You want to cook wild salmon more carefully as it has no visible fat so is less forgiving about overcooking.

TJ’s wild caught Alaskan Sockeye cost $13.99/lb. That is $4 more per pound than the Norwegian farmed Atlantic Salmon at Trader Joe’s (currently $9.99/lb) However even $14/lb is probably a decent price for wild caught Alaskan Sockeye. I have a feeling say at Whole Foods similar wild Alaskan Sockeye salmon probably costs more like $20lb or more….

Our $16 package of salmon was a little over a pound of fish and was cut into two fillets. This was actually a whole side of one salmon filleted, with one thick piece (the head end, visible in the photo above). Under that was a thinner piece (the tail end) not as attractive of course. The tail piece is thin. Wild salmon is thinner than farmed, and leaner so you need to be more careful cooking it and it will take less time to cook.

RECIPE: BROILED SALMON WITH WHITE MISO: I coated the salmon on both sides, slathering on a coat of Trader Joe’s WHITE MISO PASTE and sprinkled it with fresh black pepper. Do not add salt as the miso has plenty. I let the fish marinate for about an hour at room temp. If you don’t have that much time, give it 20 minutes. To cook it I put both pieces in a cast iron pan skin side down. I dotted the top with a few dots of butter, then broiled the fish on just the top side for about 5 minutes, or just until the flesh flaked apart easily. I didn’t flip this wild salmon over to cook the skin as I would normally do to get the skin crispy. I was worried about overcooking it.

The fish was delicious cooked this way. We ate one piece (1/2 lb) and I saved the other so I managed to get another meal out of the one package. I cooked up both pieces and kept that tail piece of salmon for the next night where I used it for a Japanese style “donburi” rice bowl (a rice bowl topped with shredded salmon meat mixed with some white miso. Put the flaked up salmon on top of warm rice and sprinkle with FURIKAKE flakes. The salmon this way was also delicious and was a good way to use that tail end of the fish.

Personally I love the taste of wild salmon which has a more robust flavor than Norwegian farmed Atlantic salmon (however I do enjoy that as well.)

I’m not someone who will only eat wild fish. If we all did that, there would be no fish left in the oceans. I like both kinds of salmon as each have certain qualities, the main difference being the fat content. The fat marbling seen in the farm raised salmon does keep the salmon nice and moist when cooked, making it easier to cook without overcooking it, If you enjoy salmon, try both kinds to compare them. Some people might even decide they prefer the milder flavor of farmed salmon with it’s richer, fattier flesh (remember in fish, fat is a good thing with its Omega-3’s).

I would buy this again.

Just FYI, Trader Joe’s also has frozen Wild Sockeye Salmon in the freezer section. I think it’s a dollar less per pound…. (you can do a slow defrost yourself, overnight in fridge. )

Trader Joe’s YUZU Hot Sauce


“Product of Japan” ” Limited time only” .

This stuff is super. I love it. Limited supplies so grab a bottle while you can if you are interested!

In case you are not familiar with it, Japanese yuzu is a citrus fruit that looks like a lemon, but is quite different and unique with its own distinctive flavor. It’s used quite a bit in Japanese cuisine. Among other things they use it to make Yuzu Kosho, a spice of the zest combined with chile pepper for a spicy citrus-y condiment. Yuzu kosho has been discovered by chefs here. “The secret weapon condiment chefs are putting on everything… It’s the closest thing you’ll get to a silver bullet condiment that’ll instantly impart depth to your dish. Chefs know it—they’ve been using it at their restaurants for years—and it’s time you did, too.”

This sauce has yuzu kosho combined with “small batch vinegar” to make a hot sauce that you can add a few drops or more to any food, to give it a real spark of flavor.

The sauce is really tasty and gives a nice citrusy kick to anything you put it on. As far as the spice level here, I would call it just mildly spicy, maybe “medium”, certainly not knock you head off spicy, so it may appeal to many people who can’t take too much heat.

What can you use Yuzu Kosho sauce on? Almost anything. The question might even be rephrased as what can’t you use it on? Its good on chicken, fish, salads, eggs, meats, tofu, pretty much anything you can think of. I just tested it on good old cottage cheese and it elevated something boring to a new taste.

This is worth trying if you like to taste unique items as as they say “limited” if you want to try it, grab one while you can. $3.99 a small (100 ml) bottle.

Trader Joe’s SKIPJACK TUNA (pouch)


I’ve been buying SKIPJACK TUNA in a can at Trader Joe’s for years, but when I went to get it recently I noticed they also now have it in those new tuna “pouch” packages.

First though, what is Skipjack Tuna anyway? It’s one of many varieties of tuna, and also called bonito. In Hawaii they call it, aku. In Japan its katsuo and it’s very popular, sold fresh in the fish market. I’ve made fresh katsuo, and its delicious lightly grilled on the outside and raw in the middle.

Skipjack tuna is quite tasty and has a nice flavor. One reason I get it is it’s the most sustainable tuna we can buy, more sustainable than albacore tuna or other tuna species, as you can see : (Source: Nereus program)

On the pouch it says … “this wild skipjack tuna was sustainably caught (by pole/line) without the use of fish aggregating devices (FADs)” that reduces by-catch (other fish).

When I tried the new pouch version of the skipjack I liked it (well, other than the smaller amount* you get!) Ingredients: “skipjack tuna”. The can says “ingredients: skipjack tuna, water, salt”. The pouch doesn’t say “dark chunk light”. Just “wild skipjack, hand cut, hand packed”. The tuna is compressed into a flat brick, the shape of the pouch, with just a small amount of juice, some natural juices at the bottom (its not packed in water). I dumped the whole pouch of tuna and juice into a bowl. You have to break up the tuna brick and flake it with a fork. I added a nice heaping tablespoon of Trader Joe’s Organic Mayonnaise plus a pinch of vinegar, and tasted it on some toast, and it made a nice tuna sandwich. This skipjack tuna pouch is $1.79. Much cheaper compared to the other kinds of tuna at Trader Joe’s. All in all, I’d say this new pouch of Skipjack Tuna is worth trying if you’ve never bought it before so you can compare it to the one you usually get. Obviously if you want to have “tuna to go” this is great for that (picnic, work…)

*Comparing the former can version of the skipjack tuna which I have in the pantry with the new pouch version, you will notice though the amount of tuna in it has been downsized by an ounce. The pouch says “net. wt 3 oz” (85 gm). The can “drained wt. of 4 oz” (113 gm). Another sign of that well known tuna shrinkage that’s been going on for years.

Sidenote: you may have heard of katsuobushi – which is yes made from katsuo which has been smoked and dried.

UPDATE: I may be mistaken in that they’ve will no longer offer the skipjack tuna in a can, or at least today I saw both versions of it on the shelf, together. It’s possible Trader Joe’s is going to offer both versions, pouch and can? Perhaps some people prefer pouched tuna to a can? They are the same price – but one does get a one ounce more in the canned version. I will have to compare both against each other….

Red Boat Viet KHO Simmer Sauce


I saw this in NEW ITEMS about a month ago and grabbed one to try. This sauce is made by Red Boat, a company that makes a famous top Asian fish sauce. Trader Joe’s sells tha. Its a well known top brand fish sauce. Something I always like to have in the pantry. Its Pure Umami.

Red Boat says: “In Vietnamese, kho means to braise and this dish is on regular rotation in all Vietnamese households but is rarely served in restaurants. Our Pham-ily created this sauce so you can enjoy this delicious meal, just like in our mom’s kitchen, in less than 30 minutes.”

We know Trader Joe’s likes what they call “simmer sauces”. They have at least two versions of Thai ones and an Indian sauce too. You can use these and just add a protein and veggies, pour in a bottle of your simmer sauce, let it simmer for about 20 minutes and voila you can have a very easy and tasty dish. This sauce made a delicious meal for us.

I used this sauce to make a braised dish with chicken and lots of vegetables. What I did was I sauté chicken (skin on, bone in thighs), tofu, carrots, onions, mushrooms, garlic and ginger for 10 minutes. Then I poured in the sauce and let it simmer. Though they say “simmer for 30 minutes”, I wanted the chicken to be falling off the bone so I let it simmer for more like 45-60 mins.

The resulting dish was excellent, redolent of fish sauce (nam pla) of course but it had many other flavors with lots of Umami. It had a bit of sweetness as well as a bit of heat. We thought the dish was so good, that we just scarfed it up! I used a lot of vegetables and bone in chicken so of course it had all the flavor from those as well, however you could easily make a less complicated easier dish with this sauce using boneless chicken, TJ’s Carnitas Pork, shrimp or fish or even tofu and mushrooms for that matter and come out with a lovely dish, full of Asian flavors. My intentions was to make enough for at least two meals so I used the whole jar plus 1/2 a jar of water as I wanted a huge amount of sauce for all the meat and veggies I used, and I got that which we enjoyed with rice.

Ingredients: Water, Fish Sauce, Organic Coconut Sugar, Canola Oil, Ginger, Shallot, Corn Starch, Green Onions, Citric Acid, Black Pepper, Sunflower Lecithin, Crushed Red Pepper, Yeast Extract.

I’m not sure if this was a one off trial run for Trader Joe’s or something they will keep in stock. If you do see this sauce it is worth getting if you want to make a great Vietnamese home style dish easily. In a pinch one could make the sauce using Red Boat fish sauce, coconut sugar and other ingredients (shallots, garlic…)

TJ’s had the sauce for $4.99 which is even cheaper than on the Red Boat website.

Trader Joe’s DILL-ICIOUS SMOKED SALMON


NEW PRODUCT: “Seasoned Cold Smoked Salmon with Dill Pickle Flavoring”.

Trader Joe’s seems to just love dill pickle stuff. They have quite a few products with the flavor. I love (fresh) dill on many things and especially love a sprinkle of fresh dill on smoked salmon (or fresh salmon). I love Gravlax (Scandinavian dill cured salmon).

However I didn’t love this new TJ smoked salmon flavor at all, I found it to be a Miss. For one thing I am guessing they use dried dill, not fresh. In fact they even list “dill weed oil” as one of the ingredients, which seems to me like trying to mimic fresh dill’s taste? Before reading this, I didn’t know “dill weed oil” existed as an ingredient. Furthermore this salmon seems a bit tougher (thicker cut?) then other seasoned salmons I really like from TJ’s, namely the Everything Smoked Salmon as well as the Pastrami Smoked Salmon, both of which I think work way better than this seasoning. I like both of those TJ’s smoked salmons

The 4 oz. package was $6.49. For me this stuff is a Miss. I rate it somewhere between a “Meh” and a Rant. Frankly my advice is pass on this but get either of those other two good seasoned smoked salmon Trader Joe’s offers.

I would not buy this again.

Trader Joe’s BATTERED FISH NUGGETS (+ Fish Taco recipe)


Trader Joe’s Fish Nuggets are tasty and these taste like a real battered piece of fish. They are perfect for making fish tacos for one thing. The first ingredient is Alaskan Pollack. Don’t confuse this item (“Fish Nuggets”) with TJ’s “Fish Sticks”which are terrible, way inferior to these at a dollar less. I used these nuggets to make Fish Tacos for dinner the other night. BTW I didn’t bake these as it says on the package. I sauteed them in a cast iron pan till they were crispy on both sides.

We really enjoyed these when we made them into fish tacos. The popular TJ’s Fish Tacos recipe is easy to make. You take a package of these, Corn Tortillas (which I think will taste better than flour ones) and top with crunchy slaw made with the Cole Slaw Mix, some Greek Yogurt, and lime juice. Optional but nice would be some ripe avocado and your favorite hot sauce. I would recommend TJ’s Green Dragon and/or Peri-Peri hot sauce as being a good match with fish tacos.

TJ’s BATTERED FISH NUGGETS are now $5.99 for a 1 lb package. The other thing these might be good for is an English style Fish & Chips with some french fries?

FISH TACOS

Add yogurt and lime juice to the slaw mix; let sit a 1/2 hour to marinate. Cook up the fish till golden brown and put two pieces into a warm corn tortilla and top with slaw and a few drops of salsa or hot sauce.

Trader Joe’s GARLIC SPREAD / DIP (with Spinach recipe hack)


This has become one of my favorite items at Trader Joe’s! If you love garlic as much as I do, you too will love thier “GARLIC SPREAD DIP” . It’s great and has become yet one more TJ’s must have item I have to always have in the fridge now. I think of it as much as an ingredient as a “spread”. You can add a spoon of this to a dish to give things an immediate flavor boost, almost like you would fresh garlic. I put this in mashed potatoes, spinach, pasta, hummus…. It’s so versatile. It makes a great spinach dish. I came up with a super quick recipe hack using just 2 things: frozen) spinach and this stuff. See my “recipe”below.

Quite a few countries have some type of garlic spread like this. In Lebanese cooking, they have the garlic spread called “Toum” (and basically TJ’s spread is Toum). In Greece, they have a spread called “Skordalia” made from garlic, olive oil and potato. In the South of France they have the yummy yellow garlicky mayonnaise called, “Aioli” famously served on toasted baguette slices alongside Bouillabaisse. Mashed garlic acts as an emulsifier with oil to make a spread. Trader Joe’s version like Lebanese toum is an emulsified paste of garlic, oil, lemon juice and salt, traditionally made in a mortar and pestle. They did not skimp on garlic. TJ’s GARLIC SPREAD is so garlicky it’s not funny. True garlic lovers will want to try this on everything. So what can you use this Garlic Spread on? To start with just try it on thin slices of toasted baguette, which will be match well with a salad or soup like croutons or garlic bread. This stuff is especially good for any pasta dish. Just toss in a spoonful into your finished pasta, especially tomato pasta (PESTO ROSSO? Add some of this to jazz it up! Use this instead of butter for cooking grilled cheese sandwiches. Put a little into your tuna or egg salad. Eggs, try some in an Omelet for some kick. Salmon or other fish, for sure. I’ve found it’s fantastic in mashed potatoes to jazz them up. Almost any vegetable dish will be enhanced with a spoon or two of this vegan garlic spread, so it’s ideal for vegans and vegetarians as well as us non-vegetarians. It was amazing on the CHICKEN SHAWARMA. Greek yogurt plus some of this spread makes and instant super easy tasty sauce. Here’s a recipe I came up with using spinach. This is a great tasting spinach dish in under 2 minutes.

SPINACH WITH GARLIC SPREAD RECIPE – Two ingredients: frozen spinach and garlic spread. Toss the spinach in a pan with a little olive oil (or butter) and cook for a few minutes till done (keep it bright green!) then add in a nice heaping tablespoon of this Garlic Spread and mix. Fresh black pepper and a pinch of salt if needed. DONE. It will look a little bit creamy and taste absolutely delish. If you want squeeze on a few more sprinkles of fresh lemon.

In fact most vegetable dishes will be enhanced with a spoon or two of this VEGAN spread, so it’s ideal for vegans / vegetarians to give a enormous flavor boost to most things. One thing to remember, it does have calories. It’s mostly oil, like mayonnaise. 2 Tbls have about 150 calories. Its $2.99. GREAT ITEM! I would buy this again

Trader Joe’s THAI SWEET GINGER SAUCE


Trade Joe’s new product: THAI SWEET GINGER SAUCE. It seems to be flying off the shelves, people seem to love it. I am guessing mostly for all the frozen DUMPLINGS they buy?

I tried it and I can say it’s pretty good (though I do like my homemade dipping sauce). This sauce is quite thick and garlic-y. Ingredients include pickled garlic, coconut sugar, and coriander. Personally I think it needs even more ginger. I added some fresh grated ginger, and I found it very improved. I also found it good with something spicy added (Bomba or Peri-Peri) However even just poured out of the bottle this stuff is good. Serve this with all of your frozen dumplings obviously, either fried or steamed/boiled ones. Its quite good on sautéed tofu. Grilled chicken of course! Grilled shrimp? Perfect for shrimp or any fish for that matter. Even just try this on top of rice or just grilled veggies. It will add flavor.

Is this replacing the red bottle of SWEET CHILI SAUCE? I am afraid thats gone now. I like both sauces and the chili sauce has been a must have item for me for ever. Sigh. I will have to go back to getting CHILI SAUCE in Chinatown. Its a staple condiment in Asian cuisine.

Trader Joe’s fresh, fully cooked, ready to eat, ROASTED SALMON FILLET


This is now one of my favorite New Products at Trader Joe’s. A fully cooked, lovely fillet of Roasted Salmon. Find it in Refrigerated near the fresh fish and smoked salmon. This cooked piece of salmon is so handy and convenient, especially for hot summer days, or anytime you don’t want to cook (or smell) fish cooking. The salmon is fully cooked but just barely, it’s incredibly moist, so you can even heat it up a wee bit if you like, which I did. Now the first time I bought this I didn’t check the dates carefully, and when I opened it, I smelled the tiniest bit of a fishy smell. A sprinkle of lemon took care of that and it tasted fine. However the second time I bought it I checked a few packages and noticed some had a date maybe a day or even two older than another package. So naturally I picked out a package with the most recent date, and when I opened it that night for dinner the salmon had no smell at all. So check the packages carefully and get the latest dated ones.

For under five bucks you get a lovely fillet of farmed Atlantic salmon from Norway. No bones. Skin on. You can slip off the skin in a second. I actually enjoy salmon skin if its crispy. So I tossed the fillet into a hot pan skin side down for maybe 90 seconds to crisp up the skin. Then I flipped it and gave it about 30 seconds on the top side too to get a little sear and color (this is all completely optional of course as it is already cooked). However I did think it was slightly improved with this little searing and I was very careful not overcook the fish. Plating it up I sprinkled some TJ’s DILL SEASONING BLEND on which is a perfect match for this. I flaked up the fish with a fork, put it on a plate with a squeeze of lemon. It was delicious and a pretty good deal for $4.99 (5 oz portion) Of course the fresh Norwegian farmed Atlantic salmon TJ sells for $10/lb is an even better deal if you don’t mind cooking.

To second time I tried this salmon I thought it would be perfect to make some Japanese “Nori Hand Rolls”.

Sushi Style Salmon Hand Rolls Bites

I made some Sushi Rice and served up these tasty little bites of Salmon Hand Rolls (“Temaki Sushi”) with the salmon and matchsticks of cucumbers on TJ’s SEAWEED SNACKS (nori). One piece of salmon was enough for two of us with the rice and other things. We REALLY enjoyed these sushi bites. You take a square of nori in one hand, gently spoon on a little sushi rice add some salmon and cukes, then pop the whole bite into your mouth. This is super tasty. Really, try making this, it’s fun and delicious.

Want to learn how to make sushi rice? Its not hard and TJ’s carries the rice vinegar (you have salt and sugar). Sadly I’m afraid they’ve discontinued the CALROSE RICE they had! I’m bummed about that as med/short grain rice is best for sushi rice and it was easy to get it at TJ’s while they had it. Oh well. In a pinch, Jasmine works if you can’t get short/med grain rice.

I would think even though this salmon is cooked its still best to use it the day you buy it, if you can. If not, you could keep it in the coldest part of the fridge to use the next day (or in a pinch freeze the whole package and when ready to use, do an overnight defrost in fridge).

PS – If you dont like / eat salmon skin, and you have a pet, don’t throw it away; Wash it off as much as possible and give it to your cat or dog. They’ll likely go nuts getting some healthy healthy Omega-3’s and fish oil.
